+ Jarrah Honey (Product of Australia) Jarrah honey is a mono-floral honey derived from the Jarrah tree, a native tree in Western Australia which blooms only once every two years. Jarrah honey contains natural occurring enzymes which give the honey its antimicrobial properties. Jarrah honey is graded according to Total Activity (TA) which refers to the effectiveness of the activity of the microbial antibody. The higher the TA number, the more potent the antimicrobial activity of the honey is. Jarrah honey has a high fructose sugar but low glucose level, hence a low glycaemic index and does not create a spike in blood sugar.
